Grilled marinated vegetables
What meal is more summery than a pan of grilled vegetables? With a little olive oil, garlic, herbs and a hint of lemon, these pickled vegetables are the perfect addition to any meal.

Ingredients:
Vegetables:
- 1 red onion;
- 1 red pepper;
- 1 yellow pepper;
- 1 zucchini;
- 1 head of broccoli, cut into pieces;
Marinade:
- ⅓ cup of lemon juice;
- ¼ cup olive oil;
- 1 tablespoon of apple cider vinegar;
- 4 cloves of garlic, minced;
- 2 tablespoons of dry rosemary;
- ½ teaspoon of salt;
- ¼ teaspoon red pepper flakes (optional)
- garnish with lemon slices
Method of preparation:
- Combine marinade ingredients in a resealable plastic bag.
- Cut the vegetables into 3 cm pieces.
- Add the vegetables to the marinade and shake well. Refrigerate for 30 minutes.
- Heat the grill over medium-high heat for 10 minutes with the lid closed. Add the grill rack and close to heat for 5 minutes.
- After preheating the grill/grill, add the marinated vegetables. Cook gently for 5 minutes. Stir the vegetables and continue to cook until they reach the desired level of doneness.
- Remove from heat and squeeze lemon over vegetables. Sprinkle with salt and serve.
