Grilled marinated vegetables​​​​​​

What meal is more summery than a pan of grilled vegetables? With a little olive oil, garlic, herbs and a hint of lemon, these pickled vegetables are the perfect addition to any meal.

Ingredients:

 

Vegetables:

  • 1 red onion;
  • 1 red pepper;
  • 1 yellow pepper;
  • 1 zucchini;
  • 1 head of broccoli, cut into pieces;

 

 

Marinade:

  • ⅓ cup of lemon juice;
  • ¼ cup olive oil;
  • 1 tablespoon of apple cider vinegar;
  • 4 cloves of garlic, minced;
  • 2 tablespoons of dry rosemary;
  • ½ teaspoon of salt;
  • ¼ teaspoon red pepper flakes (optional)
  • garnish with lemon slices

 

Method of preparation:

  1. Combine marinade ingredients in a resealable plastic bag.
  2. Cut the vegetables into 3 cm pieces.
  3. Add the vegetables to the marinade and shake well. Refrigerate for 30 minutes.
  4. Heat the grill over medium-high heat for 10 minutes with the lid closed. Add the grill rack and close to heat for 5 minutes.
  5. After preheating the grill/grill, add the marinated vegetables. Cook gently for 5 minutes. Stir the vegetables and continue to cook until they reach the desired level of doneness.
  6. Remove from heat and squeeze lemon over vegetables. Sprinkle with salt and serve.
